Split pea soup Ingredients:
1 1/2 cups dried split peas, rinsed well
1 cup asparagus, sliced
1/2 yellow onion, diced
1 large carrot, diced
2-3 celery stalks, diced
3 garlic cloves, minced
1 tbsp olive oil
4 cups low-sodium vegetable broth
1-1 1/2 cups water
2 tsp Better Than Bouillon vegetable base
2 tsp Italian herbs
1 tbsp nutritional yeast
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 bay leaf
1 can (14 oz) lite coconut milk
2 tsp liquid smoke
Salt and black pepper to taste

Optional toppings:
Drizzled coconut milk
Plant-based bacon bits - [ 🔗 Click ‼️ ] parsley
Toasted sourdough bread

Lasagna Soup Ingredients:
3-4 cups diced baby Bella mushrooms
1 carrot, diced
1 green bell pepper, diced
1/2 yellow onion, diced
1 heaping tbsp minced garlic
1 1/2 tbsp vegan-friendly Worcestershire sauce
3 tsp tomato paste
28oz crushed tomatoes
2 tsp garlic powder
1 tsp onion powder
2 tsp Italian herbs
1/2 tsp smoked paprika
5-6 cups vegetable broth
7 lasagna sheets
Cooking notes: Tto make this a creamy soup by adding dairy free half & half or cashew cream. If you find that the soup is a bit too acidic, add 1-2 tsp of sugar!

Ricotta mixture:
1 cup dairy free ricotta
handful of fresh spinach
1 tbsp nutritional yeast
1 tsp garlic powder
Salt and black pepper to taste
