7 egg whites
3 scant cups Confectioners Sugar
1 scant teaspoon cream of tartar
1/2 teaspoon salt

Preheat oven to 225°. Whisk egg whites with an electric mixer until foamy. Add sugar slowly and then add the salt and cream of tartar. Beat until the mixture holds stiff peaks and is shiny like satin.

Spoon or pipe the meringue onto parchment paper lined cookie sheets in small mounds. Place the meringues in the preheated oven and place a wooden spoon handle in the door to keep it from closing all the way. Bake three hours or just until the meringues are dry and can be easily removed from the cookie sheet. Allow to cool completely before storing in an airtight container at room temperature. 

NOTE: Making meringues on a humid day may cause them to become sticky after they cool.
