Today, I'm sharing a recipe that's close to my heart: my famous Cornbread Dressing, a dish I used to sell in LA and make a killing! This dressing is loaded with chicken, onions, and celery, seasoned perfectly with sage and a touch of chicken bouillon. It's simple to make, using ingredients like Jiffy Mix that add a lovely sweetness to the dish. Join me as I walk you through each step, from baking the cornbread in a cast-iron skillet to mixing in the savory elements.

Step-by- step:

Prepare the Cornbread: Mix three boxes of Jiffy Mix with three eggs and milk according to the package directions. Pour the mixture into a greased cast iron skillet.

Bake the Cornbread: Place the skillet in an oven preheated to 400°F and bake for about 20-25 minutes. Allow the cornbread to cool after baking.

Prepare the Vegetables: In a pan, melt some butter and add chopped onions and celery. Sweat the vegetables over medium heat until they are soft, about 5-6 minutes.

Crumble the Cornbread: Crumble the cooled cornbread into a large mixing bowl.

Combine Ingredients: Add the sautéed vegetables and shredded chicken to the crumbled cornbread.

Season the Mixture: Add sage, chicken bouillon, and black pepper to the mixture.

Moisten with Broth: Gradually add chicken broth to the mixture until it reaches the desired consistency.

Bake the Dressing: Transfer the mixture back to the cast iron skillet (or another baking dish) and bake in the oven at 350°F for about 15 minutes, or until heated through and slightly crispy on top.

Make Gravy (Optional): In a saucepan, melt a stick of butter, whisk in flour and chicken bouillon until smooth. Gradually add hot water while stirring until the gravy thickens. Season with onion powder and adjust color and flavor with chicken bouillon.

Serve: Remove the dressing from the oven, let it rest briefly, and serve hot with gravy if desired.
