►Ingredients

►Chicken Tenders

3 large chicken breasts (1.3kg or 2.8lbs)

►Spices

3 tbsp cayenne pepper
1 tbsp smoked paprika
1 tsp sweet paprika
2 tsp garlic powder
1 tsp onion
1 tsp red chili
1 tsp chicken seasoning
1/2 tsp cumin
1/2 tsp black pepper
1/2 tsp msg
1 tbsp light brown sugar
1 tbsp salt
1 tsp oregano powder

►For the Dredge

3 cups (360g) plain flour
1 tbsp white pepper
2 tsp black pepper
1 tbsp paprika
1 tbsp cayenne pepper
2 tsp salt
1 tsp msg

►For Frying

1 litre sunflower oil

Mix half of the spices with 1 cup (240ml) oil
Add more if required

►For the Sauce

1/2 cup mayonnaise
1 tsp tabasco
2 tsp peri peri sauce
1 tsp lemon juice
1 tsp spices
1 tsp Jalapeno paste
1/4 cup pickle juice
1/2 tsp honey
Pinch of salt pepper


Serve with cheese sauce, coleslaw (recipe on the channel) and fries
