Bubur Lambuk, a Ramadan traditional recipe from Singaporeand Malaysiais a lightly spiced rice porridge. It s creamy, mildly spiced, cooked in coconut milk It s absolutely oil free and tastes richer than normal chicken porridge. It s accompanied with Seruding Udang Kering( Dried shrimp and coconut powder roasted with spices) Dried shrimp floss or Serunding Udang is such an addictive condiment that we can have it on its own. You will definitely love the fluffy and slightly stringy texture of the roasted coconut shreds and dried shrimp. The aroma of curry leaves and galangal will definitely fill your house while you are making this.... Singapore Malaysia Ramadan kanji Bubur lambuk 1 cup basmati ( 200gm) 3 litre water 200gm minced lamb 500ml coconut milk 1 medium onion 1 inch ginger piece 4 cloves garlic 1 cinnamon stick 3 star anise 2 cloves 2 cardamom 1 tsp cumin seeds Salt to taste Lemon grass( optional) Pandan leaf (optional) Garnish Ginger slices Spring onion Green chillies Fried onion Method Boil water... Chop onion, ginger garlic and put in water. Add all whole spices and boil... Add lemon grass and pandan leaf and boil(optional). It increases flavour. Clean the meat and soak, rinse and crush basmati rice and tip it into the boiling water. Reduce heat and add all ground spices. Cook for upto 30 min stirring continuously at frequent intervals until cooked... Add coconut milk finally and cook for a minute and remove. Garnish with fried shallots, spring onion, ginger slices and green chilly. Serve hot with shrimp chammanthi... Shrimp chammanthi podi( seruding Udang kering) Ingredients 150gm dried shrimp 1 cup grated coconut 4 to 5 dry red chillies Shallots Ginger Handful curry leaves Tamarind Salt as per taste Method Roast grated coconut with dry red chillies, shallots, ginger, curry leaves.. Add salt and little tamarind.. Roast dried prawn separately and remove. Clean and powder. Keep aside. Grind all into coarse powder...
